A new chapter in Saigon’s omakase scene
ITADAKI Saigon marks a new chapter in Saigon’s omakase scene, led by Chef Katsuhiro Ichimoto, former head chef of Azabu Restaurant, an authentic Japanese restaurant selected by the Michelin Guide Vietnam since 2023.


The Space
The space reflects the same philosophy as the cuisine.
Warm, modern lines are blended with subtle Japanese aesthetics to create an atmosphere that is calm, intimate, and quietly sophisticated, without leaning into excessive formality or tradition.
An Omakase as a Journey
Rather than serving a simple progression of sushi with soy sauce and wasabi, the omakase course at ITADAKI is designed as a journey.
Temperature, texture, aroma, and timing are all considered with precision, allowing each dish to unfold naturally in front of the guest.
The result is a refined yet dynamic experience that feels both authentic and contemporary.


Tableware with History
Special attention is also given to the tableware.
Many of the plates and dishes used at ITADAKI were personally brought from Japan and include genuine antiques, some over 100 years old.
Experiencing an omakase course served on such pieces is rare, not only in Vietnam, but even across Asia and beyond.
